National Peach Month: How and Why to Eat More Peaches

Peaches are refreshing, juicy, and delicious. Every August we celebrate National Peach Month as an opportunity to incorporate more of the fruit into our diets. Peaches keep the skin healthy, fight obesity, reduce hair loss, and acts as a natural stress reliever. With these benefits and many more, there are plenty of reasons to eat more peaches! Peach cobbler is a dessert beloved by many.

You will need:

  • 6 large peaches, cut into thin wedges
  • ¼ cup sugar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cornstarch

For the biscuit topping:

  • 1 cup flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¾ stick cold unsalted butter, cut into small pieces
  • ¼ cup boiling water

To make the cobbler:

  • Preheat oven to 425 degrees F
  • Toss peaches with sugar, lemon juice, and cornstarch in a nonreactive baking dish and bake in the middle of the oven for 10 minutes.
  • While the peaches are cooking, stir together flour, sugar, baking powder, and salt. Blend in butter with fingertips until mixture resembles coarse meal. Stir in water until just combined.
  • Remove peaches from the oven and drop spoonful of topping over them. Bake in middle of the oven until topping is golden, about 25 minutes. Enjoy!

Another easy recipe is Summertime Peach Ice Cream.

You will need:

  • 4 cups peeled, diced, fresh peaches
  • 1 cup sugar
  • 1 (12-ounce) can evaporated milk
  • 1 (3.75-ounce) packaged vanilla instant pudding mix
  • 1 (14-ounce) can sweetened condensed milk
  • 4 cups half-and-half

To make the ice cream:

  • Combine peaches and sugar, let stand 1 hour.
  • Process peach mixture in a food processor or until smooth, stopping to scrape down sides.
  • Stir together evaporated milk and pudding mix in a large bowl; stir in peach puree, condensed milk, and half-and-half.
  • Pour mixture into freezer container of a 4-quart hand-turned or electric freezer. Spoon into an airtight container, and freeze until firm.
